India, being an agricultural country, heavily relies on farming for its economy. However, it is estimated that over 30% of agricultural produce is lost due to inadequate processing and preservation techniques, a phenomenon known as post-harvest loss. This significant wastage poses a major challenge not only to farmers but also to the country's food security and economic stability.
Recognizing the importance of addressing this issue, the Vidyalaya took a proactive step by initiating a Fruits and Vegetable Processing and Preservation training program in the year 2000-01. This initiative was born out of the need to reduce the post-harvest loss by providing farmers, entrepreneurs, and communities with the necessary skills and knowledge to process and preserve fruits and vegetables effectively. The program focuses on equipping participants with techniques for handling, storing, and transforming raw produce into value-added products that can be stored for longer periods and reach broader markets.
